Producer Note: The 2018 growing season was exceptional, offering not only unprecedented quality, but also unprecedented yields. Lyme Bay’s growers know that the former trumps the latter, which meant that we were able to achieve the perfect balance. Picking took place when flavour and phenolic ripeness peaked, which coincided with unheard of levels of potential alcohol in the UK – for us this meant a higher than usual 13.5% ABV with zero chaptalisation, while retaining a superb acidic structure. Fermentation was carried out using a mix of wild and Burgundy yeasts in 2-year-old French oak and stainless steel, adding a rich mouthfeel, excellent body, and notes of ripe stone fruits, brioche and honey, finishing with huge length.
